This highly selected coffee from a single plantation comes from El Salvador; in particular, it is grown by the Angelucci family in the Balsamo Mountains between 1250 and 1450 meters above sea level.
In fact, the growing area owes its name to the strong presence of balsam trees throughout the area that guarantee great biodiversity in the plantation, creating large shaded areas where the coffee grows "sheltered" from strong winds and torrential rains. The composition of the soil is volcanic and provides excellent mineral nutrition for the plant.
Most of the plantation is of the Bourbon variety, one of the oldest, but at the same time delicate varieties present in the area, while in the most exposed parts they leave room for the Pacas variety, much more resistant than the first. After careful manual selection, the ripe cherries are processed according to the washed method and then dried on large terraces in the sun.
At the head level there is an aromaticity associated with biscuits and dried fruits, in particular with amaretto and almond with a very persistent aftertaste of milk chocolate; acidity is limited and leaves room for sweetness and a medium body
